French Beans with Coconut

This is a simple vegetarian dish that goes great with anything and everything and may be enjoyed by itself all together.


  • 2 pounds of green beans with the ends trimmed.
  • 2 TB Extra virgin olive oil.
  • 2 TB fresh minced garlic.
  • 1 TP lemon zest
  • 2 cups desiccated coconut flakes
  • Salt and pepper to taste


Cooking Instructions

  1. Blanch the green beans in well salted water until bright green, tender and crisp.
  2. Drain and shock in ice cold water. This process will help it stop cooking further.
  3. Heat a large skillet with olive oil, add the garlic and coconut flakes and proceed to sautéing until fragrant.
  4. Add the green beans and sauté for roughly 5 to 6 minutes.
  5. Add the lemon zest and season with salt and pepper.
